Pasta Fagioli

Pasta Fagioli
1 or 2 carrots chopped
1 onion chopped
1 celery stalk chopped
1 garlic clove chipped
Olive oil to cover bottom of the pot
28oz can of crushed tomatoes
16oz veg or chix broth
½ cup water
19 oz can of cannellini (white kidney beans)
Half pound of ditalini pasta
Parsley, salt, pepper, garlic powder
Sauté veggies in olive oil.  Add tomatoes, water, broth, seasoning, simmer 15 minutes.
Add beans and simmer for another 15 minutes.  Add uncooked pasta until done.
